  • 320g of high-quality spaghetti (preferably whole grain for extra fiber)

  • 4 fresh egg yolks, packed with high-quality protein

  • 100g of chicken bucaneve (replacing traditional guanciale)

  • 50g of grated Pecorino Romano cheese

  • Freshly ground black pepper

  • A pinch of salt

Step-by-Step Preparation

  1. Prepare the Base: In a bowl, whisk the egg yolks with the grated Pecorino cheese and a generous grind of black pepper. Set aside.

  2. Cook the Chicken Bucaneve: Dice the chicken bucaneve into small cubes and sauté it in a non-stick pan until golden.

  3. Cook the Pasta: Bring a pot of salted water to a boil and cook the spaghetti al dente.

  4. Combine Everything: Drain the spaghetti, reserving some cooking water. Add the pasta to the pan with the chicken bucaneve and toss well. Remove from heat, then stir in the egg yolk and cheese mixture quickly to create a creamy sauce. Add a bit of cooking water if needed to adjust the consistency.

  5. Serve Immediately: Plate the pasta and top with a sprinkle of Pecorino and more black pepper to taste.
